There's been some debate recently on what makes a neighbourhood restaurant. However, we figure that if you've spent the past decade living somewhere, that's surely got to count for something. And locals Lynsey Coughlan and Lindsay Lewis have lived in Hackney for ten years before deciding to open their first restaurant.
Inis, which will be part of Fish Island's The Trampery campus, is going to serve up a mix of British and Irish food. The head chef will be Craig Johnson (formerly of Arbutus and The Corner Room) and one of his key suppliers will be The Ginger Pig which Lynsey used to be a director of (she's also a consultant at Borough Market).
The cafe will open, during the day only to begin with, serving up breakfast and lunch, with weekend brunches and Sunday roasts also in the mix. Dinners will come later in the summer, along with alfresco seating.
In addition to a full Irish brekkie (that means both black and white pudding and roast potato farls) dishes will include:
- Whiskey smoked salmon with crème fraiche and pickled onion on Irish brown bread
- Mussels with chips and garlic bread
- French toast with mascarpone, stewed rhubarb and brown butter crumble
Even the drinks list sounds really interesting. Clara Rubin who's worked for everyone from Hawksmoor and the Drapers Arms to Restaurant Gordon Ramsay, is behind the wine offering while Hawksmoor's Liam Davy has come up with the cocktails.
