If your cravings lean towards the freshly baked kind, then you might want to consider joining the queue outside Layers Bakery, which opened a store and cafe down by the waterfront on the Goodluck Hope island in East London last month. It joins a hub of other creative outlets and independent businesses on the industrial-inspired riverside development on the Leamouth Peninsula, where you can see everything from the English National Ballet rehearsing to live jazz bands playing in the Lockdown Room.
Inspired by the community they’ve just joined, Layers intends to serve not just pastries, breakfasts, brunches and coffee, but to host workshops and events, such as cookie-making classes for kids and viennoiserie-pastry-making sessions for adults.
You’re in very experienced hands with the founders Giulia, Faye and Chelsea. Giulia is the former head baker at Hedone and recently trained the team at Fallow helping to develop their potato bread. Faye also brings more experience from Hedone as its former head pastry chef, as well as pastry chef at The Ritz and head of pastry at London Stock. Chelsea has the drinks side of things covered, as the founder of District Coffee and Where’s Fred’s cafe/wine bar.
Foodwise, in addition to grab-and-go pastries and coffee, you can expect a short menu of ‘Classics’, ‘Layers Specials’ and Flatbreads, including the likes of:
- Scrambled eggs: Cackleberry free-range eggs, sourdough toast, quinoa crunch
- Corn & chickpea fritters: Coconut yoghurt, spinach, poached egg, salsa verde
- French Toast croissant: Icing sugar, cinnamon butter, apple compote
- Leek & Sausage Flatbread: Leek bechamel, sausage stuffing, sriracha mayo
We're also rather keen to try their Everything Bagel Croissant stuffed with either salt beef, American mustard and pickles or smoked salmon & cream cheese.
