Core by Clare Smyth opens Whiskey & Seaweed Bar in Notting Hill

Back at the end of summer, Clare Smyth's three Michelin-starred restaurant Core shut its doors in Notting Hill for what they described as "a refurbishment of our bar and dining room". Now it turns out that they've spent that time not simply refurbishing the restaurant but in fact building a new bar.

Whiskey & Seaweed (the e in the name will be a nod to Clare's Northern Irish heritage) is named after the cocktail inspired by Clare's best-known dish Potato and Roe. So not only will there be a massive selection of whiskies from the British Isles and Ireland but there'll also be cocktails using it too. That Potato and Roe drink involves Butter-washed Irish whiskey, kelp, sea lettuce and black cardamon. We're also keen to try their Irish coffee which pays tribute to the drink's Irish creator Joe Sheridan and involves whiskey caramel.

Having had a sneak peak at the bar's snacks menu, it all looks extremely enticing.

  • Beef and oyster pie
  • Lobster roll
  • Caviar sandwich

Running the bar is bar manager Vincenzo Ciacco and it's a homecoming for him as he left Core five years previously to go and work for cocktail 'maestro' Salvatore Calabrese.
