6/11/23 - Sune opening date added
She's popped up all over town as the star sommelier creating wine lists for big restaurant openings. Now Honey Spencer and her partner Charlie Sims are opening a restaurant of their own - Sune. The pair have both been part of some of London's top restaurants, including Lyle’s, Mãos, Evelyn’s Table and Brawn - not to mention working at Noma - so this is definitely one to watch.
Sune (it's pronounced soon-er) has brought in ex-Pidgin Head Chef Michael Robins to run the kitchen (he's also worked at Midland Grand, Acme Fire Cult and Akoko). The menu will be an all-day affair, with dishes including:
- Our Daily Breads - with changing accompaniments like grilled pagnotta with whipped lardo and rosemary
- Galician sea urchin and preserved tomato
- Smoked eel Caesar salad
- Linguine vongole with fried garlic and bottarga
- Za’atar spiced lamb ribs, honey, harissa and salted yoghurt
- Chocolate, cherry and pistachio tart with cherrystone cream
Of course, wine is a big deal and Honey will be mining the best wines from the network of producers she's built up over the years. The list will adapt with the seasons and we're told to expect wines from "Adelaide Hills for the summer, moving to rugged, robust reds from colder climes in the winter."
As for the place itself, there will be floor-to-ceiling windows that look out onto Broadway Market and the canal, which the back of the restaurant opens out onto.
