Lucky North Londoners are about to get a hot new bakery opening in their neighbourhood. Tarn Bakery is currently crowdfunding to open just off the Parkland Walk in the bit where Archway hits Highgate, taking over the old Trattoria Terra space.
The folk behind it are Florin Grama and Felix Ortona Coles who met while working at St Barts restaurant in Smithfield. Florin is the baker with a career that includes time at Pophams, Flor, St. Bart's and Bread Ahead. His co-founder Felix is a chef who worked at Merchant's Tavern and Quo Vadis and was the one who pestered Florin to open his own bakery.
Tarn will be pretty small and mainly focused on takeaway, they told Hot Dinners. But there will be room for a few people inside along with seating outside when the weather's good.
"We’d been searching for some time for the right place to open Tarn," Florin says of the decision to open here, "and when this location came up in Highgate, we knew that the area had that small community feeling we’d been looking for. It’s at the top of a very steep hill, and there’s an amazing view of the city once you get there! It’s also a very green and beautiful area to explore for our weekend visitors, the Parkland Walk and Highgate Wood are a stone’s throw away."
As for what they'll be selling, "we’ll be baking sourdough using UK-grown grains, and pastries will range from the classic plain croissant (still delicious!) to an array of seasonal sweet and savoury creative pastries that will showcase the ingredients our farmers have to offer week to week."
