When you’re already running an exceptional wine bar and shop, the next step is surely to launch a restaurant. That’s the philosophy from the team at 56 West Smithfield wine bar who have just opened Origin City in West Smithfield.
Provenance is a big calling card here, with all the meat sourced from the family’s 600-acre organic farm in Argyll, Scotland, which rears such traditional heritage breeds as Black Aberdeen Angus, Large Black and Tamworth outdoor-reared pigs, as well as Texel lamb. Everything is butchered in-house and aged in state-of-the-art ageing facilities.
All the seafood is from their aquafarm, Loch Fyne Oyster. There are also nods to the family’s Provençal and Slavic heritage, notably with many wines originating from their organic vineyard Château De La Cômbe in France and in the décor on the terrace, which is a fine spot to discuss their ‘no waste, great taste’ philosophy over a pre-dinner aperitif and house-made charcuterie and pickles.
Carefully sourced produce aside, diners certainly seem to be in safe hands, with executive chef Graham Chatham bringing more than 35 years’ experience from illustrious establishments such as The Langham and Rules. He’ll be reimagining British classics with dishes that celebrate all parts of the animal, and you can expect the following:
- Tamworth pork tonnato
- Grilled Texel lamb with sweetbread, merguez and salsa verde
- Black Angus steak tartare
- Devilled ox tongue
- Dry-aged Black Angus sirloin
