Half Cut Market in Kentish Town announces its first permanent head chef

Half Cut Market in Kentish Town announces its first permanent head chef

It has been trading for over 18 months as a restaurant, wine bar, deli and shop and now Half Cut Market is taking things to another level, by appointing Jack Newton as its first permanent head chef.

Originally hailing from Co Kildare in Ireland, Jack brings cheffing experience from some of Dublin’s exciting restaurants, including Brother Hubbard and Hen’s Teeth. His launch menu has been refined with the assistance of chef Jay Morjaria, who is no stranger to Half Cut’s regulars, having hosted a sold-out guest-chef residency in 2022. The plan is still to hold residencies and dinners with special guests, but appointing a permanent chef takes Half Cut into a new serious restaurant phase. With Jack taking over the reins, you can expect the following dishes.

  • Kimchi devilled eggs
  • Jalapeño panisse, pepper salsa and Parmesan
  • Crispy hen of the woods, Tajin and lime
  • XL surf and turf gilda
  • Danish panna cotta, fig leaf syrup, elderflower and strawberry

You can also partake of Half Cut’s nifty list of premium, low-intervention natural wines as well as craft beers from all over the world.
