After a while, all roads lead to London. Chefs across the globe may open their multi-Michelin-starred restaurants wherever they choose, but it does appear that to be considered a truly global culinary star, they need to have a London outpost to cement their reputation. In recent years we've had Scandinavian giants Niklas Ekstedt and Björn Frantzén finding a place in London along with Parisian pastry gods Cedric Grolet and Angelo Musa.

Now it's the turn of top French chef Yannick Alléno to cross the channel to make his mark. The chef who has 15 Michelin stars to his name will be opening Pavyllon London at the Four Seasons Hotel London at Park Lane. It's going to be an all-day spot, serving up everything from breakfast through to dinner. Alleno already has another Pavyllon in Paris as part of his restaurant empire at the Pavillon Ledoyen.

The London restaurant we're told will serve "a British expression of his signature modern French dishes" so there will be dishes that are familiar to those who've been to the Paris restaurant as well as those exclusive to London. Dishes on the launch menu include:

  • Badaboum'' organic egg with Osciètre caviar and sorrel and Salish smoked salt
  • Brioche-crusted sea bass quenelles with "Billy by" emulsion and mussels
  • Creamy pounded langoustine with potato and basil tuiles, and white onion emulsion.

As for the wine list, that's in the capable hands of sommelier Vincent Javaux who also runs the wine list at  Alleno's restaurants in Paris.
