Welcoming their 50th birthday with a £2.5 million refurbishment, Browns Covent Garden has had quite the refit, with a new art deco look. It's also opened a new drinking venue on its first floor called Spey Bar. And it comes with some fine credentials - the people responsible are behind Quaich Bar at Scotland’s Craigellachie Hotel. That, in case you didn't know it, is a 120 year old bar in Crieff known for having an incredibly large collection of Scottish whisky.
If you’re already thinking there'll be some particularly special wee drams on offer here in London, you’re not wrong. Spey Bar will be a veritable ode to all things great in the Highlands, from the hospitality to Scottish ales, and of course over 100 different whiskies (the list is called a ‘bible’ for a reason).
You can also expect plenty of Scottish produce on the bar menu. Here are just some of the highlights.
- Pan-seared scallops and Hall’s of Scotland black pudding with celeriac puree, samphire and fresh apple
- Cullen Skink croquettes: smoked haddock, cheese and mustard fried in breadcrumbs
- Haggis Scotch Egg: haggis sausage, Copper Marans egg
- Coln Valley smoked salmon with horseradish crème fraiche, capers, red onion, toast
There’s also a well-curated handcrafted cocktail list to peruse, where you could enjoy a Damp Highland Walk (gin, Campari, sweet vermouth, moss) with a Bonnie Lass (Copper Dog whisky, plum, Moët & Chandon Impérial Champagne). For added Scottish authenticity, there’ll even be Irn Bru.
