It's fair to say that Bouchon Racine is one of London's hottest restaurants right now. Henry Harris and Dave Strauss' Farringdon pub and restaurant has been crammed since opening before Christmas with a slew of five-star reviews making it nigh on impossible to get a booking.
So if you've tried and failed to get a table there - or have eaten there and want to recreate a bit of that 'je ne sais quoi' in your own home, this collaboration with Swaledale might be just the ticket. As Harris explains he's grown up in a family of sausage obsessives - his father ran a sausage shop in Brighton. He's been trying to find a great Toulouse sausage now for over a decade, with only limited success, hence the decision to work with Swaledale.
"So here is a really great sausage that we have made together," he says, "with a simple ingredient list of salt, white pepper, garlic and a splash of white wine. A savoury, comforting and restorative banger."
The sausage was launched last month in a limited edition and sold out immediately, but now it's back on sale as part of Swaledale's permanent offering.
We've been lucky enough to try them ourselves and can attest that they're great in, as Henry suggests, a cassoulet, or more simply served up with mash and gravy.
