When your other restaurants are the Michelin-starred Endo at the Rotunda and popular sushi spot Sumi in Notting Hill, it's clear that people are going to be interested in your next opening. So the news that the Creative Restaurant Group are about to open a new place in Mayfair had us doing a little digging.
HUMO is billed as a wood fire concept that's opening in the old Wild Honey space just south of Hanover Square. The chef will be Endo Kazutoshi's protege, Colombian-born, Miller Prada. At the heart of the restaurant will be a 4m long wood grill using a range of British wood including oak, cherry, walnut and beech to flavour the food.
Dishes they've picked out to give you a flavour of what to expect include:
- Ike-jime trout marinated and smoked in juniper, seared with white ubame oak and topped with 6-month-aged baerii caviar and wrapped in kombu kelp.
- Hand dived Orkney scallop, grilled on French oak which has been used to age whisky, along with a Speyside single malt whisky sabayon and white kombu kelp "shiraita”.
The restaurant will have room for just 34 diners up at the counter overlooking the grill. There's also a 10-seater chef's table on the lower ground floor.
