A Hot Dinners exclusive
A duo of hospitality folk are behind a new bar opening in London that's been inspired by the backstreet bars in Spain and Italy. Billed as a London aperitivo bar, Deep Cuts is going to serve up a mix of small plates, wine and vermouth to folks on Mare Street.
Owners Tom Rees and Ben Martin, of Homegrown Pubs, are behind the bar and also run The Carlton Tavern in Kilburn and The Fellowship Inn in south east London. As they explain: "We have all fallen in love with those little back street wine bars you get in the likes of Milan, Madrid, Barcelona etc and we wanted to bring a little bit of that to East London. We'll be cooking small plates on a Kunro grill we ordered from Japan, so it's a real melting pot of flavours and ideas."
The launch menu is a joint effort from head chef Holly Long who's been working on it with executive chef Daniel Valmorin. On that you might find:
- Artichoke hearts in Nori butter
- Gambas al ajillo
- Chorizo Au Vin
- Gyozas and Yakitori Skewers
The tight wine list will be split between classics and - music reference here - deep cuts of wine you may not have tried before. As Tom explained to Hot Dinners, "Half the list will be classics you know and love, the other will be the kind of great indigenous grapes that you might try on holiday but are hard to find when you're back in London. We told our supplier 'find the maddest stuff you've got and let us have it'."
In addition to wine there'll be a decent-sized vermouth list, ranging from Spanish classics to a vermouth made here in London in Queen's Park. Vermouth will also inform the cocktails on offer which will include, of course, negronis along with boulevardiers.
