Artfarm, the hospitality arm of the modern art gallery group Hauser & Wirth, have already opened the 5-star boutique hotel The Fife Arms in Braemar and Somerset’s Roth Bar & Grill. Now they have some ambitious plans for London.
They're behind The Audley in Mayfair, a five-storey public house and restaurant. It's taking over the space of what used to be a Mayfair pub called The Audley (they're keeping the same name) in a Victorian building which is in the process of getting a complete renovation. Once done there will be The Audley Public House at ground level and Mount St. Restaurant on the first floor. Head upstairs from there and the remaining three floors will be up for hire.
Art will be a big thing for the development, with all the areas designed to showcase art from the Hauser & Wirth art galleries. As Artfarm's CEO Ewan Ventners (previously from Fortnum's) explains: "The Audley is all about the food, the story of Mayfair - and art."
In charge of that food will be Jamie Shears, who's worked with Gordon Ramsay, the Galvins and Jason Atherton and was most recently executive chef at CUT at 45 Park Lane. For the pub he's planning to keep things simple with with a small classic menu of bar snacks. Expect dishes like Smoked Eel and horseradish on toast: London particular - a traditional soup of split peas and ham hock, fish finger sandwich with tartare sauce and London dip with horseradish sauce and gravy.
Things get even more interesting upstairs in the Mount St. Restaurant. the menu will draw inspiration from London's culinary history - updating certain classics. Those looking for plant-forward options will have a standalone vegetable-based menu and the restaurant is planning to use lost British fruits and vegetables, grown both in local farms, and at Artfarm's own Durslade Farm in Somerset.
A sample menu for the restaurant includes dishes like

- Mock Turtle Croquette, Oyster Mayonnaise, Herb Salad
- Lobster Pie for Two & Greens
- Pigeons in Pimlico, Duck Liver, Bacon & Red Cabbage
- Blackcurrant & Liquorice Soufflé
We're also pleased to see a savouries section on there with treats like Gentleman’s Relish & Cucumber on Toast and London Rarebit to look forward to.
