The Hoxton's Rondo La Cave has been home to some interesting pop-up kitchens of late - we were impressed by their last residency Chet's.
But as Chet's winds down, it's time for a new residency, and this one is all about sandwiches. Once again they're bringing in an established chef, this time in the shape of Andrei Soen, who's behind Park Bench Deli, an American sandwich spot and deli in Singapore. At Rondo, he's launching Dollars, which is taking its inspiration from New York delis.
The menu includes their own take on classic American sandwiches and it does read well:
- Beef Bollito: Braised beef belly, salsa verde, red chilli sauce, white bap
- Fried Chicken Sandwich: Crispy fried chicken thigh, dill pickles, comeback sauce, potato bun
- Pastrami Sandwich: Hot pastrami, swiss cheese, coleslaw, Russian dressing, caraway PDC bloomer
- Mushroom Melt: Pastrami roasted mushroom, sauerkraut, pickled chilli, swiss cheese, Russian dressing, caraway PDC bloomer
- Burrata Caprese: Fresh burrata, tomato, arugula, pesto, balsamic glaze, olive oil, sandwich focaccia
- Cubano: Sweet ham, roast pork, dijonnaise, swiss cheese, dill pickles, sub roll
- Philly Cheesesteak: Thinly sliced roast beef rump, sauteed onions, roasted bell peppers, cheese sauce, Philly baguette
- The Italian Job: Mortadella, soppressata, swiss, mozzarella, pecorino romano, arugula, pickled red onion, olive spread, sandwich focaccia
Alongside these will be dishes like cheesesteak spring rolls, chicken schnitzel with house salad and pastrami poutine with gravy and cheese curds.
They've had a lot of success with these residencies, so this should be well worth a look.
