Ukranian restaurant Mriya is opening in Chelsea and will be staffed with refugees

Ukrainian Chef Yurii Kovryzhenko has been an ambassador of Ukrainian cuisine for years, something that has only taken on greater importance in recent months as he's now been forced to stay in the UK due to the war with Russia. 

Recently he's been cooking with top chefs like Tom Sellers and Jason Atherton in dinners to raise funds for humanitarian aid in Ukraine, but he's also spent the time getting ready to launch his own restaurant here in London, together with his partner Olga Tsybytovska.

The chef revealed the news on Instagram about his new restaurant Mriya (meaning "dream" in Ukrainian) which he's describing as a Ukrainian neo-bistro. Kovryzhenko has also revealed that they're looking to staff the restaurant with refugees who have been forced to leave Ukraine because of the Russian invasion. He says the restaurant will "tell the story of modern and incredible Ukraine in the language of taste and cosiness."

Here are a few examples of dishes from a recent neighbour:

  • Borsch with porcini mushrooms and duck
  • Chicken Kyiv with mashed new potato and green peas
  • Poppyseeds cake with caramelized condensed milk
  • Zucchini pancakes with stracciatella and smoked trout
  • Vinaigrette with strawberries on green pea cream and crayfish necks.

On top of that, he'll also be fermenting vegetables according to ancient Ukrainian recipes. We'll have more news about the restaurant in the run-up to its opening.
