Last year we reported on the opening of Pascor, a new Kensington restaurant specialising in Aegean cuisine. While the name remains the same, pretty much everything else is about to change.
The key factor in all that is the arrival of Tomer Amedi. A year or so ago, the former head chef of The Palomar left London to open a restaurant for the Experimental Hotel Group in Ibiza. But now he's back in town as the creative director and executive chef of Pascor. That means the whole food direction of the place has changed - it's now being billed as a Levantine fire kitchen.
In practice, that means they're taking the best of British ingredients and using them in Amedi's modern interpretation of Levantine dishes, with a London twist. So you can expect dishes like:
- Samneh butter scallops - charred leek cream, merguez gremolata and lemon balm
- Charcoaled Wagyu skirt - bone marrow, pomegranate with coriander and watercress chimichurri
- Medura (campfire) style potato - ‘Butter of the Gods’ (bone marrow and egg yolk), merguez gremolata
- Burnt aubergine - black tahini, pine nuts, pickled tomatoes, mint and capers
"I’m SO excited to bring some fantastic vibes, delicious food and exceptional wine by the glass to our fellow Kensingtonians," says Amedi. On that last note, he's promising to serve up some of his favourite wines by the glass here - focusing on Levantine producers.
Hell, even the cocktails sound great - we're keen to try the White Turkish made with cardamom-infused vodka, Turkish coffee, cream and Kahlua.
