Night + Market has become something of a big thing in LA - and now the chef behind it is bringing elements of it to London for the first time.
The original Night + Market has seen its share of celebrity guests (including Gwyneth Paltrow and Leonardi DiCaprio) and its chef, Kris Yenbamroong, comes from the family that launched Talesai, seen as LA's first mainstream Thai restaurant.
Yenbamroong has launched a London pop-up called Chet's, taking over Rondo La Cave, the basement natural wine bar and pop-up space in the Hoxton Hotel in Holborn (Night + Market also has a focus on natural wine so it seems like a good fit). They'll have a menu that combines classic American dishes with Thai cuisine.
In practice, that means dishs like:
- The Chiang Rai Chilli Dog with nam prik on - a savory spicy pork ragu
- Smash Burgers with bird’s eye thousand island
- Nam Prik Gapi – a chilli dip made with Thai eggplant (aka aubergine) and shrimp paste, served with egg-battered Japanese eggplant slices for dipping
- Stinky Fish Pasta - Bucatini with butter and pla raa fermented fish
- And "Chet’s Ice cream sandwich" to finish
The pop-up runs for four months only, but that's not the end. They're also looking to set it up as a permanent restaurant in Shepherds Bush later in 2022. We'll have more news on that in due course.
