Until fairly recently Carlo Scotto was chef-patron of Xier, a restaurant that closed during the pandemic. But Scotto isn't standing still - he's getting ready to open his next restaurant, this time in Mayfair. After originally looking at a site in Stratton Street he's now secured a spot on Sackville Street.
Amethyst will carry on the style of tasting menus that Scotto was serving at Xier, which worked very well, with many options available. So at lunch, there will be a three or five-course menu and at dinner a six or 12-course affair. The space is pretty small, with room for just 36 diners in total, split across a chef's table (made of quartz and amethyst) with room for 20 and further tables downstairs in the Wine Cellar.
The kind of dishes you can expect will be along the lines of:
- Burnt hay croquette
- Yuba tartelette with caviar & scallops
- Caramel miso black cod & naganegi dashi
- Ras el hanout beef, apple and date.
"It’s been a tough couple of years," says Carlo, "but I am delighted to finally be behind the stoves again and in my own restaurant."
