You may have caught them in pop-ups and residencies over the past couple of years. but now Flat Earth pizza are getting ready to unveil their first restaurant (which just happens to be where they held their first-ever pop-up).
Set up by Sarah Brading and Rich Baker, Flat Earth are all about meat-free pizzas with an added focus on sustainability. Together they have 40+ years of experience in the hospitality industry and they brought Flat Earth to life after living on a narrowboat in East London, growing herbs and vegetables on the deck to use as seasonal pizza toppings. Their aim is to make a "progressive business that was both delicious and kind to the planet".
Their approach to low waste has also been applied to the refurb of the site they took over - in that they've mainly completed it themselves, keeping as many of the original fixtures and fittings as they could (with a few extra touches from local suppliers). They've even used vegan paint, have a counter made from repurposed scaffolding and lighting created from repurposed waste.
As for the menu, their heritage grain pizzas - made with a mix of Gilchester’s Organic heritage grain flour and WildFarmed flour - are at the heart of it. There are also added brunch dishes in the morning and extra small plates in the evening. So you can expect:
- Skillet baked kimchi shakshuka
- Sourdough with purple sprouting broccoli, smoky tomato, tahini, roast chickpeas, spring onion & chilli
- The OG ‘Hackney Hot pizza’: sweet pickled beets, Somerset 3 cheese grate, organic tomato passata, chillis
- Pizza with creamy garlic mushrooms, oat bechamel, toasted walnuts
- 5 Onion - soubise, roast red & shallots, croutons, wild garlic pesto
As for drinks, they'll have draft beer from The Kernel and 40FT, with wine on tap or in reusable bottles from Sustainable Wine Solutions (and there's a bottleshop where you can pick up a reusable bottle to take home).
