Mid-pandemic, Hot Stone launched their second restaurant in Fitzrovia - but now it's getting a relaunch as a completely new restaurant called RAI.
Still led by their Executive Chef Padam Raj, It'll be a full omakase-style tasting menu affair, combining primarily Japanese and British ingredients. Particular attention is being paid to high-grade sourcing from Japan, with Sanpuku, nori from Japan’s Ariake Sea and highest-grade Hyōgo Prefecture Kobe and Kagoshima wagyu beef.
A taste of the tasting menu includes:
- Scottish salmon tartare, yuzu miso, British pear, cave aged Dorset cheddar
- Hand dived Orkney scallop sashimi, fresh plum, spicy Japanese plum, English truffle ponzu sauce
- 48-hours marinated grilled Chilean seabass with tsukemono
- Wagyu chocolate with rosemary, thyme, cranberries, pistachio, lemon, lime & yuzu zest
The main tasting menu will be £110, but there's also a Kobe specific add-on (£65 extra) and also one just for nigri (that's £28 extra).
That's not all from Hot Stone - they also have plans to open The Gurkhas Nepalese restaurant later in the year. We'll have news of that soon.
