It's been big in Brixton - now Ferdinand "Budgie” Montoya is bringing Sarap into central London. Sarap Filipino Bistro will be the latest place to take over at 10 Heddon Street, a site that has previously held both Manteca and Fallow on extended stays before they became permanent restaurants.
Budgie's new Mayfair restaurant is being described as an "evolution" over the more casual Brixton space, but continuing its modern interpretation of Filipino cuisine
The main event will no doubt be the Lechon suckling pig - and here there will be a chance to get the dish served whole (see above), stuffed with lemongrass aromatics and truffled adobo pork rice. That'll feed 4-6 people but note that you'll have to order it 48 hours in advance. On top of that, there will be more small plates, including:
- Rellenong Crispy Pata - twice-cooked adobo pork rice stuffed trotter
- Ensaladang Talong - smoked aubergines, tomatoes, salted duck egg
- Escabeche - grilled monkfish, sweet and sour red pepper sauce, pickled peppers
- Ginisang Monggo - squash stuffed with mung beans, spinach
It'll all finish off with desserts that include Tsokolate - a four-layered chocolate cake that will showcase the types of cacao found in the Philippines.
