One of London's iconic (and we don't use that word lightly) dishes is coming back. Revered chef Pierre Koffmann (who seems to be making it his mission in 'retirement' to visit every restaurant in London) is bringing back his pig's trotter, the dish he's probably best known for, in a new collaboration with HG Walter.
The dish was last seen at his Koffmann's restaurant at The Berkeley (where we last tried it) but this new version will be a finish-at-home job.
If you're wondering just what this dish is - here goes. It's a deboned and slowly cooked pig’s trotter, with a chicken mousse, veal sweetbread and morel mushroom filling, finished off with a rich Madeira and trotter jus and creamy mash using - of course - Koffmann’s own potatoes. The good news is that this kit is just a warm-up job - all the actual hard work will have been done for you.
