Over at Borough Market, there's a new kid on the (butchers) block, when it comes to evening dining. Northfield Farm butchery have moved into the restaurant business, by opening an evening alfresco supperclub. Chef Joe Albina, who trained under Pierre Koffmann and who would normally be head chef at The Blueprint Cafe if that were open, is going to be serving up a carnivore's delight of a menu.
As Dom McCourt who runs the Borough Market butchery explained to Hot Dinners, Joe will be serving up "an ever changing menu of small plates that pay tribute to our values of whole animal butchery of rare and traditional breeds of beef, lamb and pork."
The meat itself comes from the farm that Dom's brother runs in Rutland where they regeneratively farm.
Dishes you might find on the menu include:
- Cured beef tongue and celeriac
- House salami with pickled mushrooms
- Dry-aged Tri-tip skewer with homemade chimichurri
- Tonkatsu pork chop with pickled daikon
All those come with sides that focus on vegetables sourced from Northfield's neighbours in Borough Market. For drinks, there's a small wine choice plus a range of beers and ciders that are sourced from small breweries local to the farm.
