Summing it all up: Famed Niklas Ekstedt is coming to London with a new restaurant at the Scotland Yard Hotel that will be all about showcasing his wood-fired Nordic cooking style.
The low-down
There are big changes afoot at the Scotland Yard Hotel (once the home of Robin Gill's restaurant, The Yard). Michelin-starred chef Niklas Ekstedt is getting ready to make it the site of his London debut restaurant.
This will be the famed Swedish chef's first restaurant outside of Stockholm, where he's best known for Michelin-starred Ekstedt restaurant and his entirely wood-fired cooking approach. It's that approach that he's aiming to bring to Ekstedt at The Yard.
It's unclear how much the existing hotel restaurant will be revamped, but the open kitchen is retained and we'll assume there will be something to showcase all that fire. Here's what we know will be on the menu:
- Oyster flambadou with smoked apple and beurre blanc nasturtium (one of his signature dishes)
- Ember baked leeks, white fish roe, smoked roe deer
- Reindeer, smoked celeriac, black pudding and salt baked roots to share
- Cep soufflé with birch ice cream and blueberries to finish.
In addition to that, daily churned butter, freshly baked bread, pickles, ferments and cultures will all be made in-house.
