The low-down
If there's one thing we've really missed over the past year, it's the interaction that comes with sitting up at a counter and watching a chef at work. So the arrival of TEMAKI in Brixton sounds like a great way to get back in the game.
For the lucky few who manage to get a seat reservation either inside at the counter or on the covered terrace, it'll be the chance to see top Japanese rice chef Shaulan Steenson and his team at work. Steenson trained in Japan at Tokyo's Hakkoku under world famous chef Hiroyuki Sato and Sushijin in Toyama. Here he and his fellow chefs will be hand wrapping sushi to order.
There'll be classic handroll combinations - like white and brown crabmeat with egg yolk and white soy along with unagi eel, with its own sauce, cucumber and wasabi - along with more seasonal options. Additional dishes to accompany the temaki includ toro sashimi with smoked salt and buckwheat and salmon skin crisps with chilli and salt.
While you're sitting in to enjoy the temaki you can browse a drinks list of wine, sake and Japanese beers. Shaulan has also brought in mixologist Karol Bobinski who's come up with some bottled cocktails for the bar, adding a Japanese flavour twist to classic drinks.
