After previewing the restaurant in a residency at Brown's, chef Daisuke Hayashi is getting ready to open Roketsu in Marylebone.
Hayashi came to London after training at the Kikunoi Ryotei restaurant in Kyoto and as a protege of seven-Michelin-starred chef Yoshihiro Murata. He has since been Executive Head chef at Tokimeitē in Mayfair. His new restaurant will be all about Japanese Kaiseki dining - the Brown's pop-up was a multi-course Japanese tasting menu that finished off with an organic, stone milled, single-varietal matcha tea.
They were also showcasing the menu with delivery Gozen dinners (which looked incredible) throughout various lockdowns - but the main restaurant is incoming.
Roketsu will be serving a 10-course Kaiseki menu (£190) which will be based in dashi and changing with the seasons. It should look pretty special inside too - the interior has been made in Kyoto by experts Sotoji Nakamura and shipped over to London for building by the same craftsmen who created it.
This is definitely one to watch and looks to have "Michelin star" written all over it.
