Chefs at home - what London's chefs are cooking for themselves during lockdown (5 June)

Over the many long weeks we've been in lockdown (wait - is that still actually on?) we've really enjoyed bringing you our weekly roundup of what London's chefs have been making for themselves at home.

We've aimed for every week's list to be representative of this city's diverse pool of talent - both in terms of gender and race. But this week it felt like more was needed. So here's the best of what London's black chefs and restaurateurs have been cooking at home this week. Be inspired!

 

Keshia Sakarah - Caribe

Keshia has popped up across London (and at Pop Brixton) with Caribe's authentic Caribbean food. This is based on her own recipe for fried chicken, which you can follow on Youtube, where she's been regularly uploading recipes. 

 

Andi Oliver - Andi's Wadadli Kitchen

Great British Menu judge Andi Oliver is opening her new delivery restaurant Wadadli Kitchen in Clapton today, but she's still got time to lay down this epic meal.

PRAWN PORN - Tiger prawns, prawn bisque, asparagus. I kept it simple to enjoy unadulterated prawn goodness. One day the leftover bisque will make a luxurious risotto. . Bisque Prawn shells 1 onion 1 carrot 8 tbsp Olive oil 120ml dry white wine . 1. If your prawn heads are huge like mine, chop them in quarters then fry with the shells in 4 tbsp olive oil on high for 6mins. 2. Remove shells from pan, add the rest of your olive oil then thinly diced veg. Sweat until soft. Reintroduce prawn shells add wine and simmer for 5 mins until alcohol evaporated. 3. Blitz the contents of your pan. Add a little water if necessary, then pass through a fine sieve twice. Return to pan, season and serve. 👌🏾 . TOP TIP: To prevent prawns from curling as they cook. Drizzle with olive oil, place a sheet of baking paper on top of the prawns and something heavy on top of that. I used the black oven tray in the earlier post . . William JM Chilila - Akoko

Masterchef: The Professionals finalist William JM Chilila is preparing to open his new restaurant Akoko later this year. In the meantime, keep an eye on his feed for plenty of recipes and tutorials. Talking of which, we badly need the recipe for this Guinness bread. 

 

Nokx Majozi - Holborn Dining Room

The rest of us mere mortals can only dream of having pastry skills like this. This pie is raised pork (pork shoulder, bacon and mince meat) with dried fruits (apricots, sultanas, prunes), fresh herbs (sage, parsley and lemon thyme) and pine nuts. That's one hell of a pie.
