Summing it all up: Trained up under Massimo Bottura, Neapolitan born restaurateur Ivan Simeoli's pizzeria is all about the correct ingredients.

The low-down

Two years on from opening his first pizzeria in London, on Brick Lane, pizzaiolo Ivan Simeoli is on the verge of opening his second, this time in Fitzrovia.

The Neapolitan-born chef trained up under Massimo Bottura at the Michelin-starred Osteria Francescana in Modena. At his own pizzeria, you'll find the ultra trad pizza made with San Marzano tomatoes and mozzarella Fior di Latte from Agerola but also treats like Pizza Fritta - and yes, that is deep-fried pizza. We're particularly keen to try his La Fritta pizza topped with Cicoli (pork crackling).

The Great Portland Street restaurant, which takes over the old Picture site, will have room for 70 diners - and we're told they're bringing in new brunch menus later in the year.
