Australia Day may be behind us, but fundraising efforts to help the firefighters and animal rescue workers dealing with the devastating Australian Bushfires are still ongoing.
The latest tasty endeavour to do just that is The Lamington Project. It's the brainchild of Bianca Bridges - the Instagrammer behind @BreakfastLondon and co-founder of The Jungle Collective who run The Railway Tavern in Stoke Newington.
The idea is simple, so we'll let Bianca explain:
"London chefs, cooks and bakers have created their unique take on the iconic Australian lamington cake. On our website, each chef participant will have their own auction and raffle for the public to bid on – one batch of lamingtons is won through the auction, and the other through the raffle."
The list of participants is pretty darned impressive - everyne from Ottolenghi and Great British Bake-off Winners Frances Quinn and Edd Kimber to restaurants like Aqua Shard, The Delaunay, Salon and bakers Lily Vanilli and Violet Cakes among others.
Both the silent auctions and raffles close on 29 February 2020 at 23:59 with 100% of the proceeds split amongst the following charities: Red Cross Australia, The Salvation Army Australia, CFA (Country Fire Authority), NSW Rural Fire Service, and WIRES Wildlife Rescue.
