In a nutshell: Pizza group uses original Italian journey to inspire their 12th opening

Summing it all up: Brothers James and Thom are drawing on the Italian journey they made before opening their first pizzeria to inspire the design of their 12th restaurant.

 

The low-down

For their 12th pizzeria, Pizza Pilgrims are throwing something new into the mix. Their next restaurant, opening in Victoria in January, will use the original six-week journey the two brothers made through Italy before opening the first pizzeria, as inspiration for what they're describing as "an immersive pizza pilgrimage".

In practice, that means the new restaurant will be split into four distinct areas, each representing different regions of Italy - Naples, Amalfi, Tuscany and Bologna.

The bar area will be Amalfi, the area which inspired the brothers' booze brand Pococello. Here they'll be serving up Limoncello cocktails and they're promising an interesting sounding Pepergroni - a take on the Negroni with gin switched for Bourbon and topped with caramelised pepperoni.

The main restaurant will be Naples and will be designed like a traditional cobbled piazza with outside seating. From there you use the Emilia-Romagna stairway to get to the Parmigiano corridor - which will feature row upon row of Parmesan cheese wheels.

Finally, there's the wine room inspired by Tuscany. This Tuscan wine cellar will have a wall of wine and can also be used as a private dining room.
