It's time for another change at P Franco, the tiny Clapton wine bar that manages to keep well ahead of London trends with only a few induction hobs to its name. If you're not familiar with them, they switch over chefs every six month or so - each chef completely changing the style of food and really stamping their name on the place. Most recently was Tubo Legier - and all eyes are on him to see what he does next.
This time it's the turn of Seb Myers - who has worked in London at Viajante, Chiltern Firehouse and was one of the original people behind Snackbar (Freddie Janssen now goes it alone). Most recently he's been in France, with residencies in Paris and last working in Auberge de Chasignolles. Here's what Tom Beattie of P Franco has to say about him:
We have always admired Seb's food and have been blown away with what he has achieved at Auberge de Chasignolles in the Auvergne last year. To create a completely new menu every day, 6 days of the week at the Auberge, while looking after the livestock and tending to the vegetable garden is extraordinary. It's going to be sad to see Tubo Logier go, he has done such a great job with his residency but we look forward to working with Seb.
As for what Myers says he's bringing to P Franco: "Style-wise I guess I’m taking inspiration from cave a manger places in a Paris and leaning into the colder weather with a little comfort food too". Potential dishes for the menu might be:
- Red Mullet and Onion Tartine
- Cuttlefish Rice and Bergamot
- Pork Rillettes and Pickled Turnips
So as winter draws in, Myers looks like bringing the perfect menu to P Franco for the season.
