Shaun Presland is the next 10 Heddon Street residency, serving up a contemporary Japanese menu

Chris Leach and David Carter excellent residency at 10 Heddon Street is over (but they'll be back in another permanent location soon). And that means it's time for another residency to pop up there - Pacific by Shaun Presland.

Presland is getting ready to open his first London restaurant Pacific next year (with a location still to be found). He's been a big name in Australia and is known for being a top-class sushi chef. The London pop-up will be a contemporary Japanese affair, so quite a change from the previous residency. On the launch menu you'll find: 

  • Bondi roll, a riceless sashimi roll wrapped in Tokyo turnip served with avocado, chives and house soy
  • Crispy skin Hiramasa Kingfish served with sweet ponzu buckwheat salsa
  • Wagyu steak grilled on a robata served with wasabi chimichurri dipping sauce

Oh and there'll also be a monkfish katsu sando which you'll be seeing hitting Instagram pretty soon. 

On the wine front, that'll be a combo of choices from both the classic and contemporary sides of the Aussie wine scene. At the bar you'll find a Japanese-influenced cocktail list, sakes from boutique sake distillery Kozaemon from Gifu in central Japan and they'll be making their own barley tea.

So if you're looking for a preview of what to expect when Pacific finds a permanent spot, this should be worth a look.
