Summing it all up: An ex-Trullo chef joins an ex-Barrafina GM for Legare, offering seasonal Italian pasta and natural wines.
The low-down
London’s love affair with pasta shows no sign of slowing down. To add to Pophams recently-launched evening pasta offering, and Chris Leach’s 10 Heddon Street residency, we now have news of Legare which is due to open in Shad Thames this autumn.
The opening is being led by Jay Patel, who was previously GM of Barrafina Adelaide St and Koya City, together with Matt Beardmore, previously senior sous-chef at Trullo, one of London’s best Italian restaurants. The pair will be focusing the menus of antipasti and fresh pasta around seasonal produce and will be only working with a handful of quality suppliers that they know and trust.
Fresh pasta will be the headline feature of the food offering and this will be made in-house each day:
- Tajarin with ‘burro e salvia’ (butter & sage)
- Orecchiette with fennel sausage & swiss chard ragu;
- Stracci with crab, chilli, garlic, saffron & pangrattato
- Whole large Scottish lobster taglierini for two to share (pre-order only)
They won’t be stopping at pasta however, and the carbs will be complimented with antipasti such as fett’unta of goats curd & sobrasada and a daily-changing crudo plus seasonal oysters . Rounding off the menu will be a short dessert list homemade including cannoli with seasonal fillings.
The wine menu is being developed by Cameron Dewar, currently sommelier at Elystan Street, and the list will be focused on natural and low intervention wines largely sourced from Independent Italian producers.
