In a nutshell: Insta-friendly bakery expands to Hackney
Summing it all up: Expect all the carbs at Pophams Bakery's new Richmond Road space - with the open kitchen turning out viennoiserie by day and pasta by night.
The low-down
Their pastries have been a freaking massive hit with London foodies - is there anyone out there who hasn't tried (or seen a picture) of their maple bacon croissant? - and now Pophams Bakery are expanding.
The Islington artisan bakery has just announced that they'll be opening a second place over by London Fields (taking over the old Rawduck space). Sitting right next to Patty & Bun on Richmond Road the new place will be all about the theatre of baking. They're planning an open kitchen along with a chef's table where you can see just how the pastries are made and there'll be room for 45 pastry-loving Londoners to sit inside.
"The process of making viennoiseries from scratch is so beautiful," Pophams Lucy McWhirter told Hot Dinners, "and we want our customers to be able to witness this. When sitting at the chef's table you will have a very clear view of the bakers' shaping table which is where all the shaping, cutting and laminating takes place. You’ll also be in clear view of the oven and provers both with glass fronted windows so you’ll be able to see the pastries rise and bake. If you’re lucky you might find yourself sat there at the time Florin and his team are developing something and get to sample the goods!"
New to the Hackney branch will be the chance to eat pasta there in the evenings. Pophams baker Phil King already runs a popular supper club at his home in Angel called Pasta Social. He'll be serving up pasta there in the evening along with a short list of wines by the glass.
Here's what's on the first menu:
- ‘Ham & Pea soup’, Pig Cheek Tortellini in Brodo
- Taleggio Cappelletti, Macerated Grapes & Hazelnuts
- Cappellacci dei Briganti, Isle of Wight Tomatoes, Lovage
- ‘Nduja Scarpinocc, Broad Beans, Parsley
- Yeasted Semifreddo, Fresh Peach & Croissant Brittle
"This space will give the team much more of an opportunity to develop and test new flavours and ways to bake," says Lucy, "We will also be introducing a larger variety of pastries on Monday to Friday as we currently have to restrict our larger menu to the weekend in our Islington site."
