MOLO sees ex-Novikov chef serving up gourmet seafood buns at Netil Market

What do you get when you put a chef who's spent the last seven year working at one of Mayfair's swankiest restaurants in charge of street food? Well MOLO hopes to provide the answer.

Kicking off at Netil Market this weekend, it sees the previous development chef of Novikov Group, Giacomo Uzzo and business partner Federico Ciampolini serving up gourmet fish buns.

Using top quality sustainable seafood the menu's a mixture of Mediterranean and Asian flavours. There'll be three always-on buns - one with soy butter poached king crab, a salmon version with 24 hour cured dill Gravlax, with fried zucchini, roasted aubergine and feta cream and the Vegano, featuring a rice and nori patty, with a shredded carrot and Chinese cabbage salad dressing, and garlic tofu aioli.

There'll be local beer from London Fields and Prosecco to go with the buns and a series of rotating specials planned too including Galician octopus and roasted padrón pepper with homemade hummus and pimenton mayo; fried cod and mint peas with salsa tartara and hispi cabbage and also tempura soft shell crab with a red cabbage and peanut butter dressing, caramelized apple and caramelized apple mayo .
