In a nutshell: Robin Gill’s new restaurant in the new Embassy Gardens development
Summing it all up: An Irish-influenced menu will be on offer at the ground floor at Robin Gill's next restaurant Darby’s – and also at the development’s incredible Sky Pool 10 stories up.
Fresh off the back of winning a Bib Gourmand for Sorella in the 2019 Michelin Guide, Robin Gill has announced details of his biggest, most ambitious project yet. Due to open next spring, Darby’s is opening as part of the Embassy Gardens development situated right next door to the new US Embassy off Nine Elms Lane.
Normally we’d tell you about the food first but it’s hard to ignore the fact that the kitchen at Darby’s – safely located on the ground floor – will also be serving the incredible Sky Pool, a 25-metre outdoor pool suspended between two residential towers. Apparently, there’ll be a lift out the back of the kitchen that will deliver food to the 10th floor, just beneath the pool.
Food-wise, we only know at the moment that Darby’s will be Irish-influenced and feature an open fire, an in house bakery, and a brewery making stout and vermouth.
“Darby was my father’s nickname", Gill explained. “He was a well-known big band and jazz musician in Ireland and America having toured extensively through the big cities of the US through the 50s and early 60s. He inherited the nickname from a fellow musician that he drank with regularly in bars all over Manhattan. This musician played the drums in the Orchestra for the Walt Disney Film Darby O’Gill and the Little People. He slapped the nickname on my father and it stuck.”
A new restaurant from Robin Gill would automatically be big news anyway, but when you throw in the floating Sky Pool too, this is sure to be one of biggest openings in London next year.
