Summing it all up: Having closed The Richmond in Hackney, Brett Redman and Margaret Crow are back in the seafood game with their new restaurant at the swanky Principal Hotel London on Russell Square.

Any new restaurant from Brett Redman (Elliot's in Borough and the now-closed The Richmond) is worth paying attention to. So here's what you need to know about Neptune.

Think the same combo of Brett's food and Margaret's style but transferred to more palatial surroundings

It's big

This is the main restaurant at the newly opened Principal London Hotel, so they're making a big deal of it. There'll be room for 102 diners - plus a further 30 up at the oyster bar.

Order the seafood platters if you want to be noticed

Described as 'towering' these are the food equivalent of asking for the Mahiki treasure chest. People are going to stare. What's in them will change according to the season, but expect things like Wild Cornish mussels with a saffron, orange & bay leaf soffrito or dived scallop carpaccio with ajo blanc & nori.

It'll be a good place for a group

They're planning a lot of large sharing dishes like a whole Cornish crab with house spaghetti in a smoked Datterini tomato, Vietnamese basil and long pepper sauce’.

We'll be having the caviar

No blinis and sour cream here, the Devon caviar wil come with freshly made potato waffles and house-cultured jersey cream.

Drinks are far from an afterthought

We like the sound of the interesting sounding cocktails like the Green Martian - a cucumber and absinthe daquiri and the wine list curated by natural wine authority Isabelle Legeron.
