The Camino de Santiago is a 490-mile long trek through Spain, France and The Basque Country, hiked by pilgrims since the 9th century. It's also the inspiration for a new regional Spanish restaurant called Pilgrim headed to London next year. But if you're quick, you'll be able to get a sneak preview at their Dalston pop-up.
Down at 103B Dalston Road, just off Ridley Road market, Pilgrim will be serving up a six-course tasting menu with dry sherry wines, inspired by one of the many routes that the pilgrimage can follow. For the popup, chefs Dave Bone (J Sheekey's, The Wolseley and Tom Aikens) and Anthony Power will be cooking up "The French Way", but when the restaurant opens, it's likely to change to another route-themed menu.
The regions that give inspiration to the pop-up menu will include northwestern Galicia, represented by a Pulpo al Feria-inspired dish, plus a charcoal talo (a bit like a corn tortilla) with Iberico pork short rib. Or, looking ahead to dessert, there'll be their take on a traditional Torta de Santiago, the region's famous almond cake - and a worthy reward if you've just finished trekking the Camino (or eaten all your way through the menu.) Or how about the Hazelnut crusted "St. James tart" with an apple custard (pictured)?
A seat at their Dalston pop-up will cost £47, but if you miss it the first time around don't worry - they'll be back again in early November, then heading to Palm 2 in Clapton in February 2018 ahead of the opening.
