Just opened in Borough is POPdown Cuisson: a six-month pop-up set over two floors at 1 Cathedral Street. It'll feature an Asian style bar and full dinner menu in the restaurant, inspired by the market traders and their seasonal produce.
The bar, on the ground floor, is named after the Japanese Ikigai, meaning "a reason for being" - which in this case, involves a range of craft beers, wines and cocktails matched with a bar menu featuring the likes of grilled paneer with home-made pickles, oysters tempura or with cucumber and XO sauce, and gyoza dumplings. Snacks will cost from £5.
In the restaurant upstairs, a more ambitious 5 course tasting menu is on offer for £45 - we've had a look at the dishes on offer, which range from dashi, miso aubergine purée, cured sea trout and nasturtium, to ginger and soy marinated grilled pork loin and a dessert of satsuma custard with a sesame and citrus salad.
The bar will be open from 5.30-11.30 from Tue-Sat, opening at lunchtime from mid-August. Dinner upstairs will start at7pm Tue-Sat nights, with bookings available via www.cuisson.co.uk.
And, say the team - keep an eye on their website for some special events, like an oyster cooking masterclass and an Asian beer tasting evening - hosted in conjunction with selected Borough Market traders.
