If you hadn't already made plans to hit Chiltern Firehouse between now and Christmas, then here's a solid reason why you should. Nuno Mendes has a sensational sounding new snack on the menu. Made from the same dough as his famous crab doughnuts, the braised short rib and truffle roasted buns go on the restaurant menu after Thanksgiving.
As Nuno explains; "The bun and its filling connects several cultures and is personally connected with my own voyage. Bun or Bao originated from the word Pao which means bread in Portuguese. The Portuguese took it to China and the Chinese took it around the world including North America where these can be found with a wide range of fillings savoury and sweet that we have known for some time as doughnuts.
"In this simple bun, I managed to pay tribute to my home-country, showcase a cuisine that has inspired me in my cooking for many years and also celebrate the traditions of the country where I spent my formative years, North America."
The braised short rib & truffle roasted buns will cost £3 each and be on the menu from Friday 27 November 2015 at Chiltern Firehouse, 1 Chiltern Street, London W1U 7PA
