Popping up at Stoney Street, one along from Wright Bros, is the company's newest (but most transitory) opening, Shuck.
All they're serving up are oysters - "naked, dressed or blown" with naked starting at £1.50 a bivalve. On the menu right now are; The Shuck Shuck - with a classic Som Tam dressing, The Moor Shuck - with pomegranate, sumac, chilli and red wine vinegar and a Jalapeno dressed oyster. There's a range of blown oysters, including cheese, pickled ginger and bacon melt and a mediterranean anchovy, butter, lemon, olives and sundried tomato version, that are cooked in front of you with a blow torch. And they're currently working on expanding the menu to an ultimate seafood kebab and a range of pokes.
As for drinks, there's Shuck lager, wine, Gin Mare, Ocho tequila, vodka and Prosecco on tap.
Shuck is now open at 7 Stoney Street until the end of the year and there are plans to take it on the road soon. Keep up with their exploits on Twitter @shuckldn
