If you've a taste for the finer things in life, you'll be wanting to get your name down for Les 3 Étages by Dom Pérignon. It's a ten day dining experience, taking place in a secret central London location in May.
What we do know is that the venue is a traditional London townhouse. Over three floors, three expressions of Dom Pérignon will be explored with a series of parties and events. Key to the success will be the involvement of Spring chef Skye Gyngell who'll be overseeing the restaurant side of things. She's come up with a paired tasting menu featuring light summer dishes, with fresh, locally sourced seasonal ingredients to be specifically paired with the three different plénitudes of Dom Pérignon.
You can choose from a morning tasting, lunch or dinner and your journey through the house sees you move through various plénitudes or cycles of the champagne. On the first floor you'll be able to try the newly-launched 2005 Vintage. The second floor will focus on the 1998 Vintage and on the third floor the rarest 1982 and 1971 Vintages will be showcased, all by Dom Pérignon's new brand ambassador Tom Harrow.
Skye's menu does sound divine - for lunch and dinner it will be
- Crab with shaved raw wild asparagus, borage flowers and samphire
- Guinea fowl with morels, broad beans and peas
- Young goats curd, foraged herbs, fig, fennel and walnut bread and imprevio new season olive oil (dinner only)
- Gariguette strawberries, set cream, brown butter and rye shortbread
Les 3 Étages by Dom Pérignon will be open from 5th to 14th of May 2015. Tickets are priced at £95 for a morning tasting, £200 for a lunch and £250 for dinner and can be booked here.
