Motley, a colourful and quirky restaurant, hidden in the heart of Whitechapel has launched a new Waste Not menu, feauturing a veggie-forward menu using produce that would have otherwise been discarded, including imperfect fruit and veg, to create appetising dishes.
Expect broccoli stalk hummus with homemade flatbread, mushroom skin tagliatelle with truffle oil and topped with a garlic and parsley crumb made from Parmesan rinds, a vegan sweet corn fritter burger served with pickled slaw, chickpea habanero aioli and sweet potato fries, ugly roasted vegetable salad made using unloved veg (those with irregular shapes, scars and bruises), in a sweet maple syrup and caper vinaigrette and rejected fruit crumble using old and bruised fruits infused with vanilla and topped with a sweet and crunchy crumble.
The Waste Not menu is just one of the many ways Motley gives back to the environment and local community. The restaurant keeps low food mileage by sourcing suppliers from local markets including Broadway and Borough, and maintains a small carbon footprint by making sauces and breads in-house.
Located in London’s greenest hotels, Qbic, the all-day dining restaurant also offers a Saturday brunch with live music and a DIY bottomless mimosa buffet.
