Finely sliced black pepper coppa made in-house is a thing of beauty to look at, ruffle up, lay on the semolina sourdough and eat. Jersey milk lends ricotta a satin finish denied other whey cheeses and the combination visually as well as in terms of flavour with black olives and golden Parmesan is regal.

This Italian restaurant just off Borough Market has a very specific speciality - they use purified seawater in their pizza dough. And they're rated as serving up some of the best pizzas in London as a result.

Caprice Holdings have a pretty good hit rate in London and they're winning again with this Knightsbridge opening. This time around, it's a loosely 50's/60's Italian themed bar and restaurant with its own terrace. It's based on Harry's Bar - but you don't need a membership for this restaurant. Expect casual Italian dining.

Probably the London restaurant that's done more for this city's passion for pasta than any other opening, Padella comes from the Trullo stable and serves up freshly-made-each-day pasta. The only downside is the queue or waiting time for a table. Prepare to be patient.

The people behind Soho's Mele e Pere have opened this Italian trattoria in Hackney. Expect a regularly changing Italian menu, vermouth on tap and plenty of home-made goods to take away.

The menu at Artusi changes all the time, chalked up on a wall to salivate over, and it is always hard to choose from. The dishes match the décor – inspired, fresh, no-nonsense. Italian-inspired, pasta is made on-site daily. One day there might be cacio e pepe, and the next pappardelle with merguez sausages. Meat comes from renowned neighbourhood butcher Flock & Herd.

This sees Angela Hartnett taking over the site in St James which used to hold Gordon Ramsay's original Petrus restaurant (and where she was Head Chef). This informal restaurant from Gordon Ramsay is his first venture south of the river. The restaurant focuses on Mediterranean seasonal ingredients with an emphasis on Italian artisan producers. They'll be complementing this with whatever is on hand from popular local foodie markets at Borough and Maltby Street. All of this will be in a large space designed by Russell Sage.

Neapolitan owner Paola is one of the friendliest folk in Finsbury Park and takes inspiration from her homeland for the dishes and wine list here. Food is homely but delicious and the welcome is big on Italian warmth.

Ex-lawyer turned chef Guglielmo Arnulfo has opened this new Italian restaurant specialising in dishes from Liguria. The menu includes stuffed courgette blossoms, Troffie al Pesto – a Ligurian speciality pasta with just flour and water, and Cuttlefish in Zimino – Tuscan cuttlefish stew. There will also be a luxury wine cellar with private dining on the lower ground floor, seating up to 15.

2 Exmouth Market, London EC1R 4PX

This Italian restaurant right on the corner of Exmouth Market is concentrating on "cucina povera", the tradition of using simple ingredients to prepare honest and flavoursome food" with a design from the people behind Bubbledogs.
