Not content with merely opening a new restaurant, Anzu, a few months ago, the folk behind Tonkotsu are keeping busy by completely organising a series of ramen collaborations with guest chefs.

First up, there’ll be tapas legend Jose Pizarro, who together with Tonkotsu's Ken Yamada has come up with a brand new dish for the menu: Iberico pork ramen, a Spanish/Japanese dish made up with piquillo peppers and served shot of sherry on the side, which will be available in all seven of Tonkotsu’s branches from February. After that, there’ll be guest appearances, and dishes from Kricket, Gizzi Erskine, Rum Kitchen and Cabrito Goat.

On top of the collaborations, there’ll also be a new menu to keep your eyes peeled for, which will boast sweet potato korokke, a new seafood ramen (pictured) and a whole new gyoza menu from which you can order those all important dumpling delights.
