Ray's Bar Dalston launches summer menu with half price cocktails

With summer surely just around the corner (or at least for today), Ray’s Bar, a subterranean bar beneath Voodoo Rays are launching their summer cocktail menu with 50% off drinks.

Created by head bartender Dave Miller (Jamie Oliver’s Fifteen, 214 Bermondsey), the summer menu launches this week and focuses on redefining modern classics using traditional techniques. Miller has introduced drinks which employ natural clarification alongside milk punches and sherberts - the end result being a menu which is both adventurous and accessible.

Cocktails on the summer menu have been separated into chapters which guide drinkers through their evening. Starting naturally with a section dedicated to Aperitifs, the list then ventures into Mains before reaching ‘To Finish’ - a dessert menu of sorts. A new section simply entitled 'The After Party’ sees them finish on a high.

Sample drinks from the new menu include:

Aperitifs

Voodoo Radler – Pamplemousse, Grapefruit Sherbert, Hop Syrup, Lager
Koku – Saké, Umeshu, Lemon, Violet, Egg White

Mains

Scotch Mist – Highland Park 12 Scotch, Orange Sherbet, Lemon, Ginger & Cassia Syrup
Citrus Paradiso – Martell VSOP, Grapefruit, Lemon, Maraschino, Curacao

To Finish

Gunpowder Gimlet - Absolut Elyx Vodka, Death’s Door Gin, Green Tea, Clarified Lime Juice
Smoking Jacket – QuiQuiRiQui Matalan Mezcal, Sweet Vermouth, Fernet-Branca, Bitters

After Party

Sweet Virginia – Beefeater Gin, Belsazar Rose Vermouth, Raspberries, Lemon
La Vida Loca – Vida Mezcal, Amaro Montenegro, Maraschino, Lime, Velvet Falernum, Green Tea

That’s not all though. There will also be a selection of classic cocktails as well as house beers, and wines on offer. Most importantly, guests can order pizza from the Voodoo Rays upstairs to help soak up some of these powerful concoctions.

If you're looking after the pennies, Ray’s Bar are offering 50% off cocktails on Tuesday 16th, Thursday 18th, Tuesday 23rd and Thursday 25th May. The only catch is you'll need to reserve a table by emailing drinks@raysbarlondon.com.
