Hill & Szrok Master Butcher & Cookshop opening on Broadway Market

 Hill & Szrok Master Butcher & Cookshop opening on Broadway Market Coming to East London's Broadway Market in March is a new 2 in 1 establishment - butchers by day and restaurant - or "cookshop" - by night. The man behind it is Luca Mathiszig-Lee (from The Eagle and The 3 Crowns by Old Street) and he's got Butcher Tom Richardson Hill and head chef Alex Szrok working with him.

By day - the butcher takes the lead. Tom Richardson Hill (who's previously been at Frank Godfrey's in Highbury and Allens of Mayfair) is working with small farmers specialising in rare breeds, free range and organic meat. He'll also be curing his own bacon and gammon, making his own sausages, salami and selling these alongside terrines, pates and sauces.

By night (from 7pm) the cookshop will take over. Head chef Alex Szrok, also previously at The Eagle, is in charge. You'll be able to buy the very best cuts of meat from the shop and have him prepare them for you. Starters will include roast carrot, pickled onion, walnuts and Buckingham White or chicken liver parfait, crostini and pickles. The mains, meanwhile, will showcase the meat with regular changing sides (Midnight potatoes, Hispi cabbage, fried eggs). Examples of that meat include:

  • Hampshire pork sausages (3 for £7.50 or £2.50 per sausage)
  • Galloway on the bone sirloin (from £17)
  • Southdown mutton cutlets (2 for £10 or £5 a cutlet)
  • Suffolk White chicken quarter (£12)
  • Braised ox cheek with bacon and ale (£12)
  • Dorset Downs Butterflied leg of lamb to share (£32)

As for the room itself, it has a fair bit of history. It was originally a butchers and behind it was the original slaughterhouse for Broadway market. During the night the main central marble worktop will convert into a communal dining table, and there will be stalls lined up against the wall counters too and laid for evening service.
