Greek-inspired Oma comes to Borough Market

Kiln and Sabor chefs team up for the Greek-inspired OMA in Borough Market

Borough Market's restaurant scene continues to get better than ever. Following the arrival of both Kolae and Akara last year, two big chefs are teaming up for a new Greek-inspired restaurant (taking over the old Rabot 1745 space).  

Oma comes from David Carter, the man behind Smokestak and Manteca, who's brought in Nick Molyviatis, former head chef of Kiln to work on the menu, and Jorge Paredes, ex-executive chef at Sabor who will be leading the kitchen. Planning a combo of a raw bar and open-fire kitchen. the menu will include dishes like:

  • Hung sheep’s yoghurt with a salt cod XO sauce,
  • Gilthead bream, jalapeño aguachile and Datterini tomato
  • harissa-grilled prawns with cucumber and mint tzatziki
  • Brown crab borek
  • Cornish squid brushed with garlic, za’atar and sumac
  • Lamb belly and caramelised date molasses skewers

As for the wine list, expect that to have a strong Mediterranean feel too.
