Zoilo chef Diego Jacquet is opening Florencio Pizza, an Argentine-inspired pizzeria, in Marylebone

More than a decade after opening the doors to his Argentine grill Zoilo, chef Diego Jacquet is expanding. He's getting ready to open a pizzeria just around the corner from his restaurant.

Florencio Pizza will give him a chance to showcase pizzas inspired by his travels around the world including time spent in Patagonia, his life in Argentina and the creative input of Italian immigrants in Argentina.

Obviously, a great pizza starts with the basics and the pizzas here will be made with a 48-hour fermented dough, using a special blend of flours chosen by Diego. The menu will range from the classic Margherita to a Fugazza made with onions, Provolone, oregano and spicy honey.

“I want Florencio to be a truly local pizzeria," says Diego, "that combines friendly, old-school service with our unconditional love for pizza. We’ll be using the very best seasonal ingredients together with insanely well-sourced cheeses, flours and tomatoes to make the pizzas."

You'll also want to make it through to the dessert course at Florencio when you know that they're putting a banana split on the menu covered in chocolate chips and dulce de leche.

Unlike Zoilo with its Argentine-focused wine list, the drinks list here will range more widely with a mix of Italian and French wines. And running the show will be Sebastien Guilleminault who's been GM at Zoilo for the past four years.
