P Franco's new resident chef ex Burro e Salvia pasta chef Mitchell Damota

Often viewed as a space where chefs get ready for their next big thing in an environment where they can only use two induction hobs, P Franco in Clapton has a new resident chef lined up. Recently they've had Seb Myers, who's now getting rave reviews at Planque and Jamie Smart, who's now leading hot new Newington Green wine bar Cadet. Next up, according to their Instagram feed, is Mitchell Damota. 

Damota has recently been head chef at one of London's best pasta restaurants, Burro e Salvia in Shoreditch, so it seems safe to assume pasta will be on the P Franco menu in some fashion. He's already manned the hobs at P Franco in guest chef spots over the summer, with previous dishes including:

  • Hand-rolled pasta filled with ricotta, fried courgette and basil, dressed with butter and provolone del Monaco.
  • Trofie with Green Beans, Potatoes & Pistachio
  • Orecchiette, Aubergine & Cacioricotta.

So if you like the sound of all that, head over to P Franco in September. And as they will now be opening on Mondays too, you'll have more opportunities to check out the latest next big thing.
